Η ασυνεχής διαδικασία και το συγκεκριμένο σχήμα της κεφαλής του χαλκού διατηρούν τις λεπτές γεύσεις του κρασιού στα αποστάγματα.
'The process of fractional distillation and the particular shape of the head [neck?] of the copper apparatus [onion-shaped] preserve the subtle flavours of the wine in the brandies.'
Have looked up about fractional distillation, including pictures of apparatus, and it seems to me that the bit they are talking about is in English called the 'neck', but I am not sure. Any chemistry and/or wine experts?

It's not very fair - YOU suggested the translation, and I'm just confirming you are right. More over - I've got the legal experience with brandy distilling (not moonshining) ;-o. I'm not "Mr. Moonshine" - very nice and sweet song!

You're right in both terms! "Neck" is the upper part (copper end) of the apparatus, and "batch distillation" must be used - the batch (copper) is filled and the pomace is distilled to brandy (one batch distillation ;-o )

NB I think that I should have 'batch distillation' instead of 'fractional'.
