"prayers and peace" sound literal, I'm giving you suggestions for the widely used translations for this sentences.

Here are other suggestions for your consideration:

Praise be to Allah, Alone, and Peace and Blessings of Allah be upon Prophet Muhammad after whom there is no other prophet.

All praise be to Allah Alone, and peace and blessings be upon the Last of the Prophets

Praise be to Allah Alone and peace and blessings be upon the Last Prophet.

Here is a comparison for the two expressions based on google hits:

"Peace and Blessings of Allah be upon" 2,920,000 hits
"Prayers and Peace be upon" 868,000 hits

So, I think your best option is to go with "peace and blessings" because it is the more widely used translation, and as I said "prayers and peace" sound literal.

Praise be to Allah alone and may prayers and peace be upon the last of the prophets.

I don't think there is a single uniform and correct way to translate this... Hanem EI-Sayed Aly EI-Farahaty translates it as "Praise be to Allah, Prayer and Peace be upon the last of all the Prophets," omitting "alone." (Problems of Translating Legal Discourse with Special Reference to the United Nations Documents, University of Leeds, 2001)

Prayer and Peace sounds perfectly natural (I made a mistake by recommending "Prayers" here), but if what my colleague points out in regards to the number of google hits per translation is true, I would opt for his translation because it is used more often.
