Lentils cook very quickly but if you're not careful, they can overcook and **become too soft** for salads. Keep them firmer by cooking just until tender, then drain and rinse under cold water to arrest the cooking.

I've never heard of lentils melting... but they do fall apart if overcooked... so you want to avoid having them fall apart....
